Chato murciano: Winner of best dish announced at Lorca Gastronomy Competition
A dish of pig trotters with chickpeas from the Paredes Restaurant has taken home 1st prize
This morning, the awards ceremony was held for the winner of best dish at the II Jornadas Gastronómicas in Lorca that uses the typical chato murciano pig as an ingredient. The prize was organised by tourism and hostelry organisation Hostelor, and the jury – made up of experts in the field of gastronomy – made the decision after visiting one by one the participating establishments and tasting each dish.
The jury took into account the flavour, technique, presentation and incorporation of the product in order to make their decision on how good each dish was. Among the almost 20 participants who took part in this initiative, the best dish to use chato murciano was that from Restaurante Paredes, with the dish that won the day being their ‘manitas con garbanzas’ pig trotters with chickpeas.
Second place went to the Taberna La Cepa and its dish ‘Del chato hasta los andares’ which includes cauliflower cream, sobrasada béchamel and caramelised dried fig.
Lorca’s Councillor for Hospitality has pointed out that the purpose of the competition is to “make our gastronomy known, but also the products of our land, putting value on the chato murciano, a breed that has been recovered through a successful conservation and production programme and in which Lorca has been one of the leading towns.”
He continued: “From the Lorca City Council we congratulate all the participating establishments but especially the three winning restaurants, which have been able to show with their tapas the innovation and all the flavour that can be achieved using the chato murciano.”
Furthermore, for the past three weeks, residents of Lorca and visitors have been able to enjoy first-hand some exquisite recipes made with chato murciano. The product is native to Lorca and is much cherished amongst its people. The people of Lorca are very proud of the product and the dishes that can be made from it, such as the ones mentioned above.
The winners took home a prize of 500 euros.
